My Sweet Tooth!

 One of the key things to note about me is that I love chocolate! I don’t just love chocolate; I can’t live without it and besides dark chocolate is good for your heart, right? I guess that’s my argument anyway and then I don’t feel so guiltyJ

I have been going crazy over chocolate and caramel lately. I love the combination of the two ingredients because they complement each other so well.  It seems like all the recipes I have been looking up recently, have either chocolate or caramel in it, I just can’t help it….it’s so yummy!

My parents came over to our house for dinner this past weekend so I decided to make Chocolate cupcakes with homemade caramel frosting with caramel drizzle for dessert. Normally I would make the whole thing from scratch but ran out of time so I cheated and used a boxed cake mix. However, I did make the Caramel Frosting from scratch, it turned out great!


Chocolate Cupcakes with Homemade Caramel Buttercream Frosting
2 cups confectioners’ sugar
¾ cup salted butter, at room temperature
1/3 cup caramel ice cream topping
½ teaspoon vanilla extract
Pinch of salt


1.  In a bowl with an electric mixer, beat butter until light and fluffy. Add caramel, vanilla extract, and salt, and beat until well combined.  Add confectioners’ sugar, half cup at a time, and beat until smooth and fluffy, about 3 minutes.

2. Frost or pipe onto cooled cupcakes. Top with a drizzle of caramel.

3. Enjoy!
